Hiring a Braai Builder: Questions to Ask Before You Sign
A built in braai is only as good as the person who builds it. These are the questions to ask any braai builder before you pay a deposit, and the answers you should expect to hear.
Quick answer
When hiring a braai builder, ask four things before you sign: how they will size the chimney so the smoke draws, what the braai and surround are made of, whether the quote is written and itemised, and what guarantee you get once it is finished. A builder who answers all four clearly, and comes to look at your space first, is usually the right one.
A built in braai looks simple. A firebox, a chimney, some brick and plaster. But most of the braais we get called out to fix were built by someone who got one of those parts wrong. The smoke rolls back onto the patio, the plaster cracks after one winter, or the steel rusts through because it was the wrong grade.
So before you choose who builds yours, it pays to ask the right questions. Here is the list our team would want a homeowner to ask us, with the answers you should be listening for.
Already know what you want? Send us a photo of the space and a rough size, and we will come back to you with a written quote.
Why Hiring a Braai Builder Is Not Just About Price
The cheapest quote is tempting, especially when three builders all say they can do the job. The difference shows up later. A braai that smokes is not something you can fix with a coat of paint. It usually means taking the chimney apart, and that costs more than doing it properly the first time.
Good braai builders spend time on the parts you do not see: the chimney opening, the throat above the fire, the base the braai sits on and the way the flue leaves the roof. Those details decide whether you enjoy it for twenty years or regret it after one season.

Questions to Ask When Hiring a Braai Builder
Use these as a checklist when you meet each builder. You do not need to be an expert to ask them. You just need to notice who answers with confidence and who changes the subject.
Will you come and look at the space before you quote?
A builder who quotes from a WhatsApp message alone is guessing. Wind direction, the height of your roof, where the patio cover sits and how close the braai is to the doors all change how it should be built. Expect a site visit, or at the very least a request for photos and measurements.
How will you size the chimney so the smoke goes up?
This is the most important question on the list. The chimney and throat need to match the size of the firebox, and the flue often needs to go higher than the roof line. If the answer is vague, move on. Our guide to the outdoor braai installation process explains why this part matters so much, and when a braai chimney or canopy needs extra extraction.
What materials will you use for the firebox and surround?
Ask about the grade of steel, the fire brick and the plaster. Near the coast, ordinary mild steel rusts quickly, so stainless or properly treated steel is worth it. Our article on braai materials goes into the options in more detail.
Can I see braais you have built before?
Photos of finished work tell you a lot. Look at the plaster lines, the way the unit sits in the brickwork and whether the chimney looks neat on the roof. Real job photos are better than catalogue pictures.
Is the quote written, itemised and fixed?
A proper quote lists the braai unit, the brickwork, the chimney, plastering, any gas work and the clean up. It should say what is included and what is not. A verbal price on the day is how disputes start.
What guarantee do I get once it is built?
Ask how long the workmanship is guaranteed and what happens if the braai smokes once it is in use. A builder who stands behind the chimney is a builder who sized it properly.

Want a builder who answers all of these up front? Our team visits, measures and gives you a written, itemised quote.
Red Flags When Hiring a Braai Builder
Most problems can be spotted before any brick is laid. Be careful if you notice any of these:
- ✓No site visit and no questions about your roof or patio cover
- ✓A large cash deposit asked for before any drawing or written quote
- ✓No mention of the chimney height or the size of the opening
- ✓Mild steel offered for a braai that will stand near the sea
- ✓Gas braai work with no talk of a certificate of compliance
- ✓No photos of their own finished work
If gas is part of your plans, the gas side must be installed and signed off by a registered installer. You can read more on our gas installation and CoC page.
Custom Built In Braai or a Ready Made Unit?
Many people assume a custom built in braai means building everything from scratch. In practice, most good builds use a quality braai unit or insert, then build the brick surround, wood store and chimney around it. You get the reliability of a tested unit and the look of a custom build.
A full custom firebox makes sense when the space is an odd shape, when you want a much larger fire area, or when the braai is part of a bigger outdoor kitchen with counters, a sink and storage. Before you decide, check the standard built in braai dimensions so you know what fits.

What a Good Braai Construction Quote Includes
When the quotes come in, put them side by side. A complete braai construction quote should cover:
- The braai unit or firebox, with the make, size and steel grade
- Foundations or the base the braai stands on
- Brickwork, plastering and any cladding or tiling
- The chimney, flue pipe, roof flashing and cowl
- Any gas connection, with the certificate of compliance
- Removal of an old braai and rubble, and the clean up
- The guarantee on workmanship
If one quote is much lower than the others, it is usually missing one of these lines. Ask the builder to price the same list so you are comparing like with like.

Hiring a Braai Builder: Common Questions
How long does it take to build a built in braai?
Most built in braais take a few days on site, depending on the brickwork, the chimney and how long the plaster needs to cure. A bigger outdoor kitchen takes longer. Your builder should give you a timeline with the quote.
Do I need plans or approval to build a braai?
A standard built in braai on your own property usually does not need building plans, but a new structure like a braai room or covered entertainment area may. Complexes and estates often have their own rules, so check with the body corporate first.
Why does my built in braai smoke onto the patio?
Usually the chimney is too short, too narrow for the firebox, or the throat above the fire is the wrong shape. Wind and a nearby roof can make it worse. A cowl or a taller flue often fixes it, but sometimes the chimney needs to be rebuilt.
Can you build a braai into an existing patio or alcove?
Yes. Many of our jobs are in existing alcoves or under patio covers. We check the space, the roof and where the flue can exit, then fit the braai and build the surround to match your home.
How do I get a quote for a built in braai?
Send us a photo of the space, rough measurements and what you have in mind. Our team will arrange a visit to measure, then send a written, itemised quote.
